Kadir Nurman—an entrepreneur from Turkey who opened a street food kiosk in West Berlin in 1972—is considered the “inventor” of the modern kebab. He became one of the pioneers: his success inspired other immigrants to try their hand at this business. Back then, to make a kebab, meat was finely shredded after being grilled on a vertical grill, placed in lavash (a thin flatbread), topped with vegetables, and rolled up into a sort of roll.
